We don\u2019t know about you, but we love dessert<\/a>. So, naturally, you could say Easter is one of our favourite celebrations because we can eat chocolate without judgement for a whole weekend.<\/p>\n\n\n\n

So, when we stumbled across this viral video of Mini Egg Cheesecakes<\/a> with just six ingredients, we just had to share it with the world.<\/p>\n\n\n\n

We mean, just take a peep at this creamy, droolworthy cupcakes of Easter goodness:<\/p>\n\n\n\n

This delicious Mini Egg Cheesecake recipe was shared online by self-taught English baker Eloise Head<\/a> and has already amassed over 100K views because it is just that good.<\/p>\n\n\n\n

Keen to try it for yourself? Then grab a notepad and pen \u2018cause here are the ingredients.<\/p>\n\n\n\n

Ingredients:<\/strong><\/p>\n\n\n\n

Base:<\/strong><\/p>\n\n\n\n

150g digestive biscuits<\/p>\n\n\n\n

75g unsalted butter, melted<\/p>\n\n\n\n

Cheesecake:<\/strong><\/p>\n\n\n\n

450ml double cream, cold<\/p>\n\n\n\n

350g cream cheese, room temp<\/p>\n\n\n\n

120g icing sugar<\/p>\n\n\n\n

160g mini eggs, crushed<\/p>\n\n\n\n

Topping:<\/strong><\/p>\n\n\n\n

Whipped cream<\/p>\n\n\n\n

4-7 mini eggs per cheesecake<\/p>\n\n\n\n

  1. Crush up digestive biscuits and mix with melted butter to form the base of the mini cheesecakes.<\/li>\n\n\n\n
  2. In a separate bowl, whisk double cream into stiff peaks before setting aside.<\/li>\n\n\n\n
  3. Crush up two bags of Mini Eggs and set aside.<\/li>\n\n\n\n
  4. Whisk cream cheese and icing sugar until combined.<\/li>\n\n\n\n
  5. Fold in half of your whipped cream, before folding in the crushed mini eggs.<\/li>\n\n\n\n
  6. Scoop your crushed digestive biscuit bases into cupcake cases and press down firmly.<\/li>\n\n\n\n
  7. Scoop in the cheesecake mix and smooth out.<\/li>\n\n\n\n
  8. Freeze for 30 minutes or refrigerate for three hours before piping on the remaining whipped cream.<\/li>\n\n\n\n
  9. Top with Mini Eggs to finish.<\/li>\n<\/ol>\n\n\n\n

    Pro Tip: Eloise says if you\u2019re not serving the cheesecakes immediately, then place the mini eggs on top of the cream as you serve them because the colours will leak and run if you leave them in the fridge.<\/p>\n\n\n\n
