season of change and looking to spice things up and bring a new zest to the Sunday roast.<\/p>\n\n\n\n<p>So when we stumbled across this recipe for Vietnamese-Style Sticky Caramel Pork Belly, we knew we just had to share because it is guaranteed to become a dinner time staple this winter.<\/p>\n\n\n\n<p>Created by&nbsp;<em>Masterchef Australia<\/em>&nbsp;season two winner, Marion Garbsy, this pork Sticky Caramel Pork Belly Ingredients:&nbsp;<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>800g pork belly, skinless, cut into 4 cm chunks<\/li><li>3 pieces of orange peel<\/li><li>Juice of 1 orange<\/li><li>250 ml chicken stock<\/li><li>\u00bd cup brown sugar<\/li><li>\u2153 cup apple cider vinegar<\/li><li>\u2153 cup light soy sauce<\/li><li>2 tbsp sweet dark soy sauce<\/li><li>\u00bc cup Angostura Aromatic Bitters<\/li><li>1 tbsp finely grated ginger<\/li><li>1 tsp sea salt<\/li><li>\u00bd tsp ground black pepper<\/li><li>1 brown onion, peeled, cut into wedges<\/li><li>Asian herbs (e.g. mint or coriander), to serve (optional)<\/li><\/ul>\n\n\n\n<p><strong>Carrot pickle:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>3 large carrots<\/li><li>\u2153 cup white vinegar<\/li><li>\u2153 cup white sugar<\/li><li>2 tsp sea salt<\/li><\/ul>\n\n\n\n<p><strong>Nuoc Cham dressing:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>3 tbsp fish sauce<\/li><li>3 tbsp white sugar<\/li><li>2 tbsp white vinegar<\/li><li>2 garlic cloves, finely chopped<\/li><li>1-2 birds eye chilli, finely chopped<\/li><\/ul>\n\n\n\n<p><strong>Method:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>In a large mixing bowl, place pork pieces, orange peel, juice, chicken stock, brown sugar, apple cider vinegar, soy sauce, dark sweet soy sauce, Angostura aromatic bitters, ginger, salt and pepper, mix everything well in the bowl.<\/li><li>Place pork belly pieces into the bowl and coat all over, allow pork pieces to infuse in the marinade for 30 minutes.<\/li><li>For the carrot pickle, mix carrot, vinegar, sugar and salt, in a large mixing bowl, allow the carrot to pickle in the juices, and leave aside until serving.<\/li><li>In a heavy-based saucepan on medium-high heat, pour in vegetable oil.<\/li><li>Transfer the pork pieces into the pan (reserving the marinade) and cook for 5 minutes or until golden brown.<\/li><li>Add the onion to the pan and toss until well combined.<\/li><li>Pour over reserved marinade.<\/li><li>Reduce heat to low and cook for 1 hour or until the sauce has thickened and the pork is tender to touch with a fork.<\/li><li>To make Nuoc Cham Dressing, mix fish sauce, sugar, vinegar, garlic and chilli.
